Edibility Limes have a distinctive flavor and are used in raw and cooked dishes, desserts, and drinks across many cuisines worldwide. Their high acid content is even used to cook food in dishes such as ceviche.

Characteristics Lime trees by nature are short, bushy trees and many commercially available varieties are dwarfs that top out at six feet. Lime trees can fruit year-round with heaviest fruiting in summer and winter. Like other citrus trees, limes are susceptible to “citrus greening”, a disease that is extremely damaging to Florida citrus.
